My Favorite Noodle Recipes

I don’t think theres anyone in this world who doesn’t enjoy a good carb. Whether is smothered in cheese, marinara, or soy sauce - the feeling is the same. Savory satisfaction after inhaling a huge bowl (or bowls) in the case of my animal children.

Over the years, my Aunti Debi aka Simply Beautiful Eating has taught me a thing or two on how diversify my noodle dishes so that when I do want to enjoy a good bowl of carbs, we don’t always have to have the same thing! Because sometimes its easy just boil a pot of noodles, throw some pasta sauce on top, and call it a day.

LIGHT SPINACH FETTUCCINE ALFREDO WITH FIOR DI LATTE

The fact that this has spinach in it makes this dish healthy right? Please say yes…… haha. But seriously, I love that this dish mixes up a classic recipe like Fettuccine Alfredo. The spinach makes the noodles even more jam packed with flavor and my boys love the color!

KOREAN STYLE MEATBALLS WITH EGG NOODLES

Everyone in my life knows one thing about me without a doubt - I am obsessed with eggs. Give them to me in every form, I love them all! Whether its with my breakfast, on a burger, or in my noodles. On top of the egg factor, this has turned into one of my favorite dishes because of these Korean meatballs! They are so yummy I always make extra so me and my family can have leftovers for days following!

SPAGHETTINI WITH ROASTED TOMATOES, FRESH BASIL AND LIGHT MARINARA SAUCE

I had to be sure to throw at least one classic noodle recipe in the mix. Because after all, theres nothing that compares to a big bowl of spaghetti! The key here is to roast your tomatoes before hand, it enhances all the favors in your space and makes every bite jam packed with citrusy goodness.

Spicy Chicken Yakisoba Noodles

This has to be one of Chef Luke’s favorite recipes. He loves anything remotely related to stir fry! I kid you not, he has it at least once a week if not 2-3 times. Hey - he learned how to make it himself (with supervision) so my motto, is if you’re gonna make it yourself then go for it! And if he’s making this recipe by my Aunti Debi, then he can definitely count me in too.

APPLE RAISIN KUGEL (NOODLE PUDDING)

And last but not least, here is one of my favorite recipes of all time. Growing up, kugel was always such a treat. We would have it on special occasions and high holidays. My mom makes a mean kugel, so whenever she comes to visit me I always have her make me one of these. I know the raisins may seem a little odd, but TRUST ME on this.
