Breakfast Recipes To Start Off The New Year

They say breakfast is the most important meal of the day, and I am very guilty of skipping it! I’m just really not into breakfast foods and when I was heading into the office everyday, it was too early for me to eat something because I felt like I was still asleep.

As I’ve gotten older though, I’ve started to appreciate it more. My favorite late night diner meal is eggs benedict with a side of hash browns. And while I still tend to go straight to lunch, when I remember to eat early I really see a difference in my day! For starters, I’m not starving by 12pm. Whenever I have lunch too early then I want a snack by 4, which is very close to dinner and as a result I want dinner late. It messes up the whole day and never aligns with when other people want to eat!

So the moral of the story is…… don’t be like me. Eat breakfast!!!!! Give yourself the energy you need each day so you can focus on your goals and not about the next time you get to stuff your face. With that said, lets all kick ass in 2021 and eat our breakfast!

MAPLE VANILLA COCONUT ALMOND GRANOLA

I love this option because its tiny, so if you are like me and really don’t have much of an appetite in the mornings, its just a little something that can hold you over until lunch time and doesn’t take long to eat or make. Top it with whatever you want! I love the mix of granola & fruit here but you can also do things that are even lighter like cinnamon & nutmeg.

MANGO LASSI

This is perfect for those on the go! Just throw this in your blender and pour it into your favorite travel tumbler. You can even pre-select the ingredients for your morning smoothie by tossing it together the night before and letting it chill in the fridge. That way in the morning you don’t even need think about what to put in it!

DARK CHOCOLATE CRUNCH ZUCCHINI MUFFINS

This one is probably the most up my ally because I love a good chocolate muffin! It’s portable and satisfies your sweet tooth craving. This one is even a tad bit healthy with the zucchini mixed in! Bake a tray over the weekend and then you can just grab one on the way out. It’s also perfect for kids cause they’ll have no idea you snuck in some healthy stuff!

Chocolate stuffed Crepes

This recipe is definitely a weekend treat, when you want to feel fancy! I LOVE crepes, I look at them more as a dessert than a breakfast item but you can’t go wrong either way! You can stuff them and top them anyway you want so they’re perfect when you want to just throw together leftover fruits at the end of the week.
