Love of Lemon Round Up

So one thing that always gets me in the mood for summer is lemons… I love them. I have lemon juice in my tea every morning & in the summer I LOVE making homemade lemonade slushies (and on the weekends they become spiked lemonade slushies!).

So with Memorial Day happening this weekend, I was searching the blog for some good recipes whether they be snacks or cocktails and I came across SO many things to fulfill my lemon craving.

LEMON SHANDY BEERMOSA

Literally anyone who knows me, knows I’m a beer type of girl. It’s by far my go to drink and I always have at least 3-4 different types of my favorite brews on hand. One of my favorite summer beers is Shandy’s by Narragansett. It feels like summer in a can, so I always have them in my fridge when the weathers nice out! But if I ever want to spice things up, its so easy to throw together this Beermosa! It instantly takes a simple can of beer and turns it into a classy cocktail.

RASPBERRY LIMONCELLO PROSECCO

If I'm ever going to have a beverage thats not beer, I go for champagne or prosecco. ESPECIALLY when I’m with my LMP crew because we all love popping a nice cold bottle of champs. So when the gang is finally all back together again, I think I’ll have to whip up some of these bad boys.

LEMON CUPCAKES WITH WHIPPED LEMON FROSTING

Have you ever had a lemon cupcake? If not you are missing out! They are so juicy and delicious. Personally, I prefer cupcakes over cake. Why? In my opinion they’re easier to store and I like portion control. Because lets be serious, if you have to cut your own piece of cake then it’s game over…. I will cut myself the biggest piece possible! I especially love making mini cupcakes. They’re a quick little treat you can have throughout the day and not feel guilty about! So this ones definitely going on my lemon recipe list.

Lemon Thyme Gimlet

Every year I always have a few herbs planted in my garden. But this year I decided to step things up a bit and plant a full on herb garden, right out on my deck so they’re easily accessible while I’m cooking or making a cocktail. Because of this, I’ve added a ton of herbs I usually would never buy, like thyme. So I’m especially excited to try this cocktail over the summer!

LEMON ROSEMARY GIN FIZZ

This one has to be one of our prettiest cocktail to date. I mean look at that rosemary!!! And you know what else says summer? CHERRIES! All I would do as a kid is run around my backyard with my cousins eating cherries. What’s great about this cocktail for me specifically is I have a TON of gin sitting around my house. So with the help of this cocktail, I may actually drink through some of it!

Zesty Lemon Squares with Shortbread Crust

If we weren’t living in quarantine, I’d say this would be so nice to bring to someone as a little hostess or house warming gift, a big tray of lemon squares! So since you can’t be the best guest ever, be your own hostess with the mostest! Whip up a batch of these bad boys and stack them neatly on a cake stand, you’ll be starring at them for days in awe.
